Grilled Margarita-Marinated Chicken

Ingredients:

  • 2 Tablespoons Orange Liqueur

  • 2 Tablespoons Lime Juice

  • 1/4 Cup Tequila

  • 1/4 Cup Olive Oil

  • 2 Cloves Garlic (minced)

  • 1 Fresh Jalapeno Pepper (seeded and minced)

  • 1/2 Teaspoon Salt

  • 1/4 Cup Chopped Fresh Cilantro

  • 4 Breast (skinned and de-bones 1/2's)

Procedure :

  • Skewer the chicken.

  • Combine first 8 ingredients in shallow dish or zip-top plastic bag.

  • Chill for 1 hour.

  • Remove chicken from marinade, discarding marinade.

  • Grill covered with grill lid, over medium-high heat (350' to 400') 20 minutes or until done, turn once.

Yield: 

  • 4 servings.
